I created this recipe looking for a bread alternative not using any grains, processed sugar and processed oils.
|
||||
It is sitting between bread and cake feel and my wife loved it. I used pasture-raised eggs to my recipe, just because it is more nutritious. But regular eggs should be fine.
|
||||
|
||||

||||
## Ingredients
|
||||
|
||||
- 6 Medium Eggs (or 5 Extra Large)
|
||||
- 1 Tbsp Coconut Oil
|
||||
- ¾ cup Coconut Flour
|
||||
- 1 tsp Baking Powder
|
||||
- Pinch of Salt
|
||||
- ½ tsp or less of Xanthan Gum (optional, to have a more stick bread)
|
||||
|
||||
## Directions
|
||||
|
||||
1. Mix all dry ingredients in a big bowl.
|
||||
2. Add the whole eggs and the coconut oil.
|
||||
3. Mix well with a spoon until it gets thick. You can add extra coconut flour if you feel it is too liquid.
|
||||
4. Pre-heat your oven to 350°F (175°C).
|
||||
5. Pour the dough evenly into a Bread/Loaf form (coated with butter or parchment paper) and cook for 35 to 45 min.
|
||||
6. After cooking, remove it from the oven and let it sits while it cools down.
|
||||
7. Some variations can be done, like using butter instead of coconut oil or adding pumpkin pure to the mix and having a cake-like texture.

Chicken stew ubiquitous in rural Brazil. Perfect pair with rice and beans, polenta or boiled cassava root.

## Ingredients
|
||||
|
||||
- A whole ckicken weighing close to 2,5kg (roughly 3 pounds). Avoid industrially grown birds, as those can make the stew very greasy and flavorless.
|
||||
- A cup of diced onions of any kind.
|
||||
- Half a cup of diced chives.
|
||||
- A tablespoon of lard.
|
||||
- A full kettle of boiled water.
|
||||
|
||||
## Directions
|
||||
|
||||
1. Cut the chicken into pieces. Remove offal or small bones, if you want. Salt and pepper to taste now.
|
||||
2. In a pan (best if cast iron), add the lard and heat it up very well.
|
||||
3. Add the chicken and lower the heat.
|
||||
4. After the meat sears, add the diced onions.
|
||||
5. When the onions brown, cover the pot with boiling water, and let it simmer for two hours. If it dries, add more water.
|
||||
6. After those two hours, add the diced chives and simmer it for more thirty minutes.

## Ingredients

- 2 Norwegian Mackerel Fillets
|
||||
- 1 tbsp Sake
|
||||
- 2 tbsp Miso paste
|
||||
- 1/2 Onion
|
||||
- 1 Summer Squash
|
||||
- 1 tbsp butter
|
||||
- 1 cup Jasmine Rice (optional)
|
||||
- Soy Sauce (optional)
|
||||
|
||||
## Directions
|
||||
|
||||
1. Place the mackerel fillets in a small container at room temperature. Pour sake on both sides of the fillets and let rest in the container, covered, for 30 min.
|
||||
2. Cut onion into large slices.
|
||||
3. To a saucepan, add two cups of water, sliced onions, and miso paste. Whisk the solution until the miso paste is fully dissolved.
|
||||
4. Bring to a boil. Let the miso soup boil for about 10-15 min, then bring to a simmer.
|
||||
5. While the miso boils, peel the summer squash. Cut squash into 1/4 in half moons.
|
||||
6. In a large pan, melt 1 tbsp butter at medium-high heat.
|
||||
7. Grill squash in the pan for 5-10 min, until both sides of the squash are golden brown. Add salt and pepper to taste.
|
||||
8. Push squash one side of the pan.
|
||||
9. Season each fillet with about 1 tsp of salt.
|
||||
10. Place the fillets in the pan with the squash. Grill each side of the mackerel for about 4 min.
|
||||
11. Serve with rice and soy sauce.

Risengrød is part of the Nordic Christmas tradition as a dinner dish. Rice boiled with milk and a little sugar to form porridge. It is served warm with butter and cinnamon mixed with sugar.

## Ingredients

- Water *3 dl*
|
||||
- Pama porridge rice *180 g*

- Whole milk *1 liter*

- Cinnamon *2 teaspoons*
|
||||
- Butter *50 g*
|
||||
|
||||
## Directions

||||
|
||||
1. Bring water and rice to a boil in a deep pot. Boil the rice at steady heat and with active stirring for approximately 2 minutes.
|
||||
2. Add milk and bring the concoction to a boil. Boil the pot at low heat, still with active stirring for approximately 10 minutes.
|
||||
3. Put on lid and boil for approximately 30 minutes. Stir the pot often. If the porridge seems too thin, boil it for another 5-10 minutes.
|
||||
4. Add salt.
|
||||
5. Mix sugar and cinnamon to form cinnamon sugar in a bowl or container.
|
||||
6. Serve warm with cinnamon sugar on top and a bit of butter in the middle.

2. Separate the egg yolk and egg white. Add the egg yolk to the dry ingredients.

3. Whisk the egg white until foamy.

4. Slice the peeled apple into thin strips. Alternatively, grate the apple.
|
||||
5. Combine dry ingredients, apple, vanilla extract, egg white, and milk into a homogenous batter.

6. To a large pan, add 1 tbsp butter. Add the batter (about 3 tbsp per pancake) and cook for 2 min per side on medium-high heat.

Strawberry Compote (клубничный компот) is a chilled sweet drink that is popular in many post-soviet countries. It is similar to strawberry jam or conserves in taste (less sweet/concentrated flavor), but resembles fruit punch in looks and consistency. It is very easy to adjust this recipe and scale it up/down.
|
||||

FYI, I suggest using organic strawberries for this (may be on the expensive side), it makes a world of difference in flavor.
|
||||
|

## Ingredients
|
||||
|
||||
- Strawberries (two standard packs works best)
|
||||
- Sugar
|
||||
|
||||

||||
## Directions
|
||||
|
||||
1. Get 3 bowls and a butter knife (if the butter knife has a point, that will work better)
|
||||
2. Dump out both packs of strawberries into a sieve or bowl and wash them thoroughly.
|
||||
3. Remove the stem and leaves/crown of the strawberry. The crown can be peeled by hand, then use the butter knife to cut out the stem.
|
||||
4. Large strawberries can be cut in half.
|
||||
5. Once all of the strawberries are clean, put them in a standard 4 quart (3.8 L) pot. Fill it with water to the brim.
|
||||
6. Put the pot to boil. The strawberries will gradually lose their color, which is completely normal.
|
||||
7. Once it boils, let it cook for 5 mins.
|
||||
8. After five minutes are over, turn off the heat and incrementally add sugar to your preference. I suggest 1-1.5 cups (237 to 355 grams) of sugar for 4 quarts (3.8 L) of compote. Taste between helpings of sugar to make sure its not oversweetened.

9. Let the pot cool, then refrigerate. Serve chilled.

## Ingredients

- 1 lb chicken breasts diced
|

- 1 medium onion chopped

- 1 small bunch parsley (about 1.5 cups, chopped, loosely packed)

||||
- 8 large eggs
|
||||
- 6 oz cheese
|
||||
- 2 tbsp olive oil
|
||||

## Spice Blend
|
||||
|
||||
- 1 tsp cumin
|
||||
- 1 tsp coriander
|
||||
- 1 tsp turmeric
|
||||
- 1 tsp salt
|
||||
- 1/2 tsp paprika or cayenne pepper if you want some heat
|
||||
- 1/2 tsp black pepper
|
||||
- 1/4 tsp caraway
|
||||
- 1/4 tsp thyme
|
||||
- 1/4 tsp cinnamon
|
||||

||||
## Directions
|
||||
|
||||
1. Mix the spices together (grinding any whole spices if necessary) and set them aside.
|
||||
2. In a large frying pan or pot over medium heat, saute the onions in about 1 tbsp of olive oil until tender.
|
||||
3. Toss chicken with 1/2 of the spice mix. Add this to the pan and brown.
|
||||
4. Add the potatoes and the water to the pan. Bring to a gentle simmer, then cook uncovered until potatoes are tender and most of the liquid has evaporated.
|
||||
5. Stir chopped parsley into the cooked mixture and set aside to cool.
|
||||
6. Preheat oven to 350°F (180°C), and grease a medium (2 quart/liter) baking pan with the remaining olive oil.
|
||||
7. Thoroughly whisk the eggs in a large bowl, then mix in the cheese. Stir in the chicken, potato, and parsley mixture, along with the remaining spice mixture. Stir until well-combined, then pour into the oiled baking dish.
|
||||
8. Bake for 30-35 minutes, or until set in the center. Allow to cool, and serve warm or at room temperature. Serve with some harissa, if you like.
