- 1 can Cut Green Beans
- 1 can Cut Waxed Beans
- 1 can Red Kidney Beans
- 1 Carrot, thinly sliced
- 1 small Onion, chopped

1. Put dressing ingredients in a large salad bowl an whisk until blended.
2. Empty cans of beans into a colander and rinse under cold water.
3. Chop remaining vegetables and add to dressing. Add beans and gently stir.
4. Refrigerate for at least an hour before serving, stirring occasionally.

- 2 Chicken Breasts
- 2 Tbsp Mayonnaise
- 1/4 cup Panko Breadcrumbs
- 1/4 cup Cheddar Cheese, shredded
- 1 Tbsp Smoked Paprika-Garlic Blend

1. Combine panko, cheese, and smoked paprika-garlic blend in a shallow dish. Preheat oven to 425F.
2. Pat chicken dry with paper towel. Carefully slice into the centre of each chicken breast lengthwise and parallel to the cutting board - leaving 1/2 inch intact on the other end. Open up chicken like a book, and season both sides with salt and pepper.
3. Coat one side of each chicken breast with mayo. Firmly press mayo-coated side into panko mixture to adhere, one at a time.
4. Transfer chicken to a parchment-lined baking sheet, coated-side up. Bake chicken on the middle oven rack until cooked through (18-20 mins).

- 1/2 cup Sour Cream

- 1 small Onion, chopped
- 2 cubes Chicken Bouillon
- 1/2 cup Cheddar Cheese, shredded
## Directions
1. Place the potatoes into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Season the potatoes with salt, and mash with 6 Tbsp of the butter, the sour cream, egg, and milk.
2. Preheat oven to 350F. Grease a 2-quart casserole dish.
3. Heat the remaining butter in a skillet over medium heat. Stir in the cabbage, leeks, and onion until the cabbage is tender and the onion is translucent (10 mins).
4. Crush the bouillon cubes into the cabbage mixture, and stir to blend and dissolve the cubes. Stir the cabbage mixture into the potato mixture until thoroughly mixed, and spoon into the prepared casserole dish.
5. Bake in the preheated oven for 40 minutes, top with cheddar cheese, and return to oven until the cheese melts (10 mins).

Sweet bread with a crumbly top. The name derives from German "Streußelkuchen", but while German colonists in Southern Brazil kept it identical to the mainland version, North Italian colonists took it and turned it into a tall loaf.

## Ingredients
For the dough:
- 3 cups of all-purpose flour
- 1 1/2 cups of sugar
- 3/4 of a cup of warm water
- 2 eggs
- 6 tablespoons of milk
- 2 tablespoons of lard or butter
- 1 tablespoon of instant dry yeast
- A pinch of nutmeg
- 1 teaspoon of vanilla essence (optional).
- Optional herbs and spices: Fennel seeds, cinammon, cloves. Don't put too many though.
For the "farofa", the crumbly top:
- 1 cup of sugar
- 1/2 cup of flour
- 2 tablespoons of lard or butter
- 1 teaspoon of vanilla essence
## Directions
1. Add the sifted flour, the nutmeg and a pinch of salt into a bowl. In another one, add the sugar, the warm water, the fat of choice, the yeast and the vanilla essence.
2. Unite both mixes and knead it until an homogenous dough forms. Put it in a properly floured and greased baking tray that you would use for baking bread, or a tall, round tray for cake.
3. Prepare the "farofa" mixing the sugar, the flour, the fat and the vanilla essence with your fingertips, until they form crumbles. Now put the "farofa" over the dough, cover it with a cloth and leave it to rest for 2 hours.
4. Then, bake it at a pre-heated 180C (356F) oven for 40 minutes.
5. Have it with [fruit jam](https://based.cooking/tags/jam/) (grape is my favourite) or [dulce de leche](https://based.cooking/dulce-de-leche/), and some coffee.

- 1 cup Elbow Macaroni
- 2 Fresh Chili or Bell Peppers
- 2 Tbsp Lime Juice
- 1 1/2 cup Regular Rice
- 3 Tbsp Oil
- 2 medium Tomatoes, chopped
- 1 large Onion, diced
## Directions
1. Place lentils in a saucepan and cover by 1" or more of water. Turn heat to high and bring to a boil, then turn down heat to simmer, and cook covered for 35 minutes or until tender. Drain and transfer to a large bowl. Set aside.
2. Bring 3 cups of water to a boil, add rice. Turn down to simmer for 20 minutes and fluff up rice with a fork and add to lentils.
3. Boil 2 quarts of water, add elbow macaroni and cook until tender. Add to lentils.
4. In a small skillet add 1 Tbsp of oil and saute chopped peppers finely for two minutes. Add the tomato, 1/2 cup of water, bring to a boil and simmer for 5 minutes. Add the lime juice. Fold this sauce into the lentils.
5. In another skillet heat 2 Tbsp oil, add onions and saute until brown. Garnish lentil mixture with the browned onions.

1. In large saucepan heat 2 tsp oil over medium heat. Add half of the chicken and cook 3 minutes until brown. Remove from pan and set aside. Repeat with remaining chicken.
2. Add remaining oil to pan; add garlic, onion, and ginger. Reduce heat to medium and cook, stirring constantly for 5 minutes or until soft. Stir in cayenne, cumin, and turmeric; saute for 1 minute.
3. Stir in stock, tomatoes, tomato paste, and sugar; return chicken to pan. Bring to boil; reduce heat and simmer 5 minutes.
4. Stir in yogurt and simmer 2 minutes.

- 1 lb Chicken Breasts or Skirt Steak, bones/skin removed
- 2 Tbsp Water
- 1 large Spanish Onion, thinly sliced
- 1/2 each Green, Red, and Yellow Bell Pepper, thinly sliced
## Directions
1. Combine 1/4 cup lime juice, 2 Tbsp of the oil, garlic, 2 tsp soy sauce, the salt, liquid smoke, cayenne pepper, and black pepper in a resealable container, add chicken/steak, cover, and refrigerate for at least 2 hours or overnight.
2. Combine water, remaining soy sauce and lime juice, and a dash of salt and pepper - set aside.
3. Grill meat over a medium-high flame for 4-5 minutes per side, or until cooked through.
4. Cut meat into thin strips - set aside and keep warm.
5. In a large skillet over medium-high heat, cook onion and peppers in remaining oil until brown - remove from heat and pour reserved liquid mixture over onions and peppers.
6. Toss together meat, onions, and peppers.
7. Can serve with warm tortillas, pico de gallo, cheese, sour cream, and guacamole.

- 1 Red Pepper, cut into half-inch pieces
- 28 oz can Chickpeas, rinsed and drained
- 1 Lime
- 3 Tbsp Wheat Flour
- 1 1/2 cup Milk
- 1/2 cup Fresh Coriander, chopped
## Directions
1. In a large non-stick frying pan, heat butter over medium-high heat. Cook onion, stirring (2 mins). Add curry paste and ginger. Cook, stirring (1 min).
2. Add sweet potato, zucchini, red pepper, salt, and half a cup of water. Stir. Cook covered, stirring occasionally until vegetables soften (10 mins). Add chickpeas and finely grated zest and juice from lime. Stir frequently until vegetables are tender and liquid has evaporated (5 mins).
3. Whisk flour into milk. Gradually stir into pan. Bring to a simmer, stirring constantly. Reduce heat to medium heat for a simmer, stirring occasionally (5 mins).
4. Stir in coriander and salt if needed.

- 1/4 cup Panko Breadcrumbs
- 2 Tbsp Soy Sauce, divided
- 4 tsp Chili Garlic Sauce
- 1/2 oz Ginger, minced
- 2 medium Green Bell Peppers
- 1 small Onion, chopped
- 3/4 cup Basmati Rice
- 2 oz Green Peas
- 1/2 cup Cilantro, loosely packed
- 1 Tbsp Moroccan Spice Blend, divided
- 4 Tbsp Sweet Chili Sauce
- Oil
## Directions
1. Preheat oven to 450F. Add 1 1/4 cup water and 1/4 tsp salt to a medium pot. Cover and bring to a boil over a medium-high heat. Add rice and reduce heat to low. Cover and cook until rice is tender and liquid is absorbed (12-14 mins). Add peas halfway through cooking. When rice is done, remove pot from heat, and leave covered.
2. While rice cooks, combine beef, panko, half the ginger, a quarter of the soy sauce and a third of the Moroccan spice blend. Roll mixture into 9 equal-sized meatballs. Arrange meatballs on a parchment-lined baking sheet. Bake on the middle rack in the oven until golden-brown and cooked through (8-10 mins).
3. Meanwhile, core and cut the green peppers into 1/2" pieces and roughly chop cilantro. Stir together sweet chili sauce, remaining soy sauce, 1/4 cup water and chili garlic sauce in a small bowl.
4. Heat a large non-stick pan over medium-high heat. Add 1 Tbsp oil, then onion and peppers. Cook, stirring occasionally, until slightly softened (2-3 mins). Add remaining ginger and remaining Moroccan spice blend. Cook, stirring constantly, until fragrant (30 sec).
5. Add meatballs and the stir-fry sauce to the pan with veggies. Cook, stirring gently, until sauce thickens slightly and coats meatballs (1 min). Season with salt and pepper, to taste.
6. Add half the cilantro to rice, then fluff with a fork. Divide rice between plates, then top with meatballs, veggies, and any sauce in the pan. Sprinkle remaining cilantro over top.

2. Drain off all but 1 tbsp. fat from saucepan. Add onions and savoury. Cook, stirring occasionally for 5 minutes or until softened.
3. Add potatoes, carrots, water and salt. Bring to boil, cover, reduce heat and simmer for about 20 minutes or until tender
4. Cut cod into 1-inch chunks. Add to vegetables and simmer for about 5 minutes or until fish flakes easily
5. Add milk and white pepper, heat through. Garnish with bacon and parsley.

- 1 can (400mL) Coconut Milk
- 1 Red Chili Pepper
- 1/2 cup Red Curry Paste
- 4 tsp Peanut Butter
- 3/4 cup Jasmine Rice
- 2 Tbsp Cilantro
- 1 Sweet Bell Pepper
- 1/2 Onion (2 oz), chopped
- 1 Tbsp Garlic Puree
- 1 oz Peanuts, chopped
- 1/2 Tbsp Soy Sauce
- 2 Tbsp Mild Curry Paste
## Directions
1. Start rice. While water comes to a boil, core and cut pepper into 1/2 inch pieces. Roughly chop cilantro. Finely chop the chili pepper - remove seeds for less heat.
2. Add rice to boiling water. Reduce heat to low, cover and cook until rice is tender and absorbed, about 12-14 minutes. Remove from heat and keep covered.
3. While rice cooks, heat a large non-stick pan over medium-high heat. Once hot, add a tablespoon of oil, then the beef and garlic puree. Cook, breaking up beef into smaller pieces, until no pink remains (4-5 mins).

- 6 oz Firm Tofu, cut into cubes
- 1 Carrot, julienned
- 2 cups Small Broccoli Florets
- 2 cloves Garlic, minced
- 2 tsp Ginger, finely grated
- 1/2 cup Roasted Cashews
## Directions
1. Loosen the precooked noodles by soaking in a bowl of hot water for 2-3 minutes, then drain and set aside.
2. Mix together the soy sauce, oyster sauce, sesame oil and 2 Tbsp water in a bowl.
3. Heat a wok or large frying pan over a high heat, add the oil and stir-fry the carrot and broccoli for 2 minutes.
4. Add the tofu and stir-fry for 4 minutes.
5. Add the garlic and ginger and stir-fry for a minute.

- 1 cup Red Lentils
- 5 Tbsp Olive Oil
- 1 Tbsp Paprika
- 1/2 Tbsp Red Paper Flakes
- 1 large Onion, finely diced
- 1 large Carrot, diced
- 4 tsp Tomato Paste
- 2 tsp Cumin
- 1/2 tsp Dried Mint
- 1/2 tsp Thyme or Oregano
- 4 cup Vegetable Broth
- 4 cup Water
## Directions
1. Reserve half the paprika and red pepper flakes, set aside.
2. Pick through lentils for any foreign debris, rinse two or three times, drain and set aside.
3. In a large pot over medium-high heat, saute 2 Tbsp of the olive oil and and onion with a pinch of salt for 3 minutes. Add the carrots and saute for another 3 minutes.
4. Add the tomato paste and stir it around for 1 minute. Add cumin, mint, thyme, and the paprika/pepper flakes not reserved - and saute for 10 seconds to bloom the spices. Immediately add the lentils, water, broth, and salt. Bring the soup to a boil.
5. Once boiling, reduce heat to a medium, cover the pot halfway, and cook for 15-20 minutes or until the lentils have fallen apart and the carrots are fully softened.
6. Meanwhile, heat the remaining olive oil in a small sauce pan over medium heat, and swirl in the reserved paprika and red pepper flakes. The moment you see the paprika start to bubble, remove the pan from the heat.
7. Blend the soup to reach the desired consistency. Taste for seasoning.
8. Divide soup into bowls and drizzle the paprika oil on top of each serving.

- 1 oz Almonds, sliced

- 2 Tbsp Parsley
- 1 Lemon
- 1/2 tsp Garlic Salt

## Directions
1. Cut sweet potatoes into 1/2 inch pieces. Combine and toss sweet potatoes, half the onions, half the garlic salt, and a tablespoon of oil. Lay to a baking sheet and roast on the middle rack of the oven, stirring halfway through until golden brown (12-22 mins).
2. While sweet potatoes roast, heat a medium pot over medium-high heat. When hot, add a tablespoon of oil and remaining onions. Cook, stirring often until fragrant (1 min). Add chicken broth and rice, cover, and bring to a boil over high heat. Once boiling, reduce heat to low and leave covered until rice is tender and liquid is absorbed (12-14 mins). Remove pot from heat, still covered.
3. While rice cooks, heat a large non-stick pan over medium heat. When hot, add almonds to the dry pan. Toast, stirring occasionally until golden brown (2-3 mins). When almonds are done, transfer to a plate and set aside.
4. While almonds toast, pat chicken dry with paper towel. Sprinkle with Turkish Spice blend and the remaining garlic salt. Season with pepper. With the pan used in the last step, increase heat to medium-high. Add a tablespoon of oil and the chicken. Pan-fry until golden brown (1-2 min per side). Transfer chicken to another baking sheet. Roast on the top rack of the oven until chicken is cooked through (10-12 mins).
5. While chicken roasts, zest and juice half the lemon. Cut remaining lemon into wedges. Roughly chop parsley. Add yogurt, half the parsley, sugar, lemon zest and juice to a small bowl. Season with salt and pepper, and whisk to combine.
6. Fluff rice with a fork, then stir in almonds and remaining parsley. Slice chicken. Divide rice between plates, then top with sweet potatoes and chicken. Spoon yogurt sauce over top. Squeeze over a lemon wedge, as desired.

2. Heat a large non-stick pan over medium heat. When hot, add the butter, onions, leeks, and mushrooms. Season with salt. Cook, stirring occasionally, until softened (2-3 mins). Add rice, garlic, and vinegar. Cook, stirring constantly until fragrant (1-2 min).
3. Add 1 cup broth from the medium pot to the pan with rice. Stir until broth has been absorbed by rice. Continue adding broth 1 cup at a time, stirring regularly, until liquid is absorbed, the texture is creamy and the rice is tender (28-30 mins).
4. While risotto cooks, add tomatoes and a tablespoon of oil to a parchment-lined baking sheet. Season with salt and pepper, then toss to coat. Roast on the middle rack of the oven until tomatoes start to burst (10-11 mins).
5. When the last cup of broth has been absorbed and rice is tender and creamy, add Parmesan and spinach to risotto. Stir until spinach wilts (3-4 mins). Stir in roasted tomatoes. Divide risotto between bowls. Sprinkle walnuts over top.
