Unset Cache in Tests (#7362) 
This is impacting other unit tests that use callbacks since the cache is
still set (just empty)

Fixes #1644

(Sidenote: While testing, I noticed we have multiple implementations of
Fake LLMs, used for testing. I consolidated them.)
